I lovvve Fall… the food is just the best. So comforting.
And I made a delicious Fall discovery.
It looks just like a regular sweet potato but…..
When you cut it up… its WHITE!
It is known as a Japanese Sweet Potato. It is also sometimes called a Japanese yam, an Oriental, Kotobuki, Satsuma Imo, or Satsumaimo.
For a yummy snack, I steamed my Japanese Sweet Potato. And paired it with some of my new Hummus:
Love artichokes, love kalamatas, so this was an obvious choice for me.
I LOVED this potato. It tasted like a regular sweet potato… but.. somehow better.
In terms of nutrition:
All varieties of sweet potato are good sources of vitamins C and E as well as dietary fibre, potassium, and iron, and they are low in fat and cholesterol. But the orange-and red-fleshed forms of sweet potato are particularly high in beta-carotene, the vitamin A precursor.
So… not bad for a “white” food
I also indulged in another autumn treat this morning.
