Ratttatttouilllle!

Did you ever see the movie? I watched it on a plane once. I liked it, I appreciated it… but I still couldn’t fully get over the fact that a rat was preparing food for people. :)

I had never actually had Ratatouille until a couple weeks ago. But when I tried it, I vowed to recreate it! And last night, I did.

Ratatouille is simply a stewed vegetable dish. But the preparation often varies: some people cook it in a pot, some in a pan, some incorporate roasting the veggies in the oven, some cook the veggies together, some cook them separately…

I don’t know which way is the “right” way. But I do know that ratatouille is a delicious, healthy and comforting meal :)

I looked up a few recipes but in the end, I sort of did my own thing. And because I wanted a fairly quick meal, I decided to throw everything into a big pan!

It turned out delicious! I served it over quinoa.

For dessert I had a small bowl of coconut ice-cream! Mmm Mmm Mmm.

Breakfast

Breakfast was another bowl of oats, pretty similar to yesterday’s. It didn’t hold me over quite as long as I’d hoped though.

So, soon after… I dug into my leftovers for another bowl of deliciousness:

Topped with crumbled goat cheese.

Why do dishes like this always taste SO much better the next day!?

And I have still have lots left!

Alrighty, I’m off to do a solid 4-5 hours of studying and THEN I am venturing out for a run!!!

    I had an extra healthy meatless Monday with a salad dinner (prepared by a relative, not me, of course):

    -fresh spinach
    -feta cheese
    -kidney beans
    -cilantro
    -homemade vinagrette!

    Haha. But seriously, that sounds like an awesome salad. Kidney beans and cilantro are my fave! I am very proud.

    In the Trader Joe’s circular they advertise Pumpkin Pancake and Waffle Mix…hmmm? Or you could make your own?
