My Healthy Chanukah Recipes Video!

Good Morning All!!!

I apologize for my absence yesterday. But I have something pretty awesome to make up for it….

Our Healthy Chanukah Recipes Video!

Tonight is the 5th night of Chanukah so there’s still time to learn how to make healthy versions of your favorite Chanukah recipes!

In this video we whip up some delicious Whole Wheat Challah, Zucchini and Potato Latkes and Homemade Applesauce.

It’s pretty great, you should probably watch it ;)

Whole Wheat Challah

Ingredients:
2 cups whole wheat flour
1 1/2 cups all-purpose four
1 pkg. active dry yeast
2/3 cup warm water
1/4 cup honey or agave nectar
1/4 cup vegetable oil
3/4 tsp. salt
1 egg, 1 egg yolk, 1 egg white (or equal amounts egg replacer)
2 tsp. sesame or poppy seed


Instructions
:

1. Put yeast into warm water and let sit for a few minutes.  In a large mixer bowl combine the  flour and the yeast. Stir in the honey, oil, and salt; add in egg and egg yolk. Beat with electric mixer on low speed for 30 seconds (you can also use your hands to mix up the dough)


2. On a lightly floured surface knead mixture for about 3 minutes. Place in a greased bowl, cover; let dough rise in a warm place for 1 to 1 1/2 hours. 

3. Punch dough down.  Separate into 3 equal pieces. Roll each piece into a long rope shape. Braid Challah. Place on a greased baking sheet and press ends of dough tightly to seal. 

4. Mix together the remaining egg white and brush over loaf. Sprinkle with sesame or poppy seeds. 

5. Bake in a 350 degrees F oven for 25 to 30 minutes or until golden. Cool. 

Makes 1 Challah loaf.

Zucchini and Potato Latkes

Ingredients:
2  medium zucchini
4 large potatoes, peeled and cut to fit a food processor.
3 eggs (or equal amount egg replacer)
2-4 tablespoons of whole wheat flour or matzo meal
1 large onion, quartered
Salt and  pepper
Canola or other vegetable oil, for frying

Instructions:

1. In a food processor either process or grate the zucchini, potatoes and onion.  (You could also grate by hand). Squeeze out any extra liquid.
2.  Add the eggs and the flour until the mixture is no longer runny and stir to blend. Add in salt and pepper to taste.

3. In a large skillet, heat 1-2 tbsp of vegetable oil over medium to medium-high heat.  When the oil is hot, spoon the mixture into the pan into small pancake shapes.  Brown on both sides. Drain them on a plate covered with paper towels and keep warm if preparing additional latkes. Serve immediately.

Homemade Applesauce

Ingredients:
6-8 apples (good cooking apples are Golden Delicious, Granny Smith, Fuji or Mcintosh)
1 tsp honey or agave nectar (optional)
1/2 tsp cinnamon or to taste (optional)

Instructions:

1. Peel and chop apples

2. Put apples into a large pot of water. Bring to a boil. Lower heat and simmer for 20-30 minutes.

3. Remove from heat. Strain out excess liquid. Place in bowl. Add in honey/agave and cinnamon. Mash.

4. Serve either hot or refrigerated. Delicious on Latkes!

    Thanks! Yes, I edited it myself. That was the first time I’ve ever made challah and it was MUCH easier than I thought it would be. I plan to make it many more times!
