A Very Vegan Passover

March 31. Wow, time flies! I’m excited though, because that means warm weather is right around the corner!

Last night I cooked Passover dinner for 22 people all by myself! Okay, I had a bit of help…okay, a lot of help :)   But I was still in charge of everything! The biggest help was actually my 5 year old cousin Maya, who spent the WHOLE day cooking with me. Such a trooper. :)
Her mommy helped too!

My mom and I decided that since my aunt would have some leftover meat from her Seder that we should make ours all vegetarian.

Well, I went a step further and made it all vegan!

On the menu was:

Yemenite and Traditional HarosetDidn’t get a picture. But here is the haroset from my aunt’s Seder (on the right)haroset

Spinach Stuff Mushrooms – I didn’t manage to snap a picture because they went so fast! But they looked something like this:spinachmush

Lemony Quinoa and Roasted Veggies – Yep, quinoa is kosher for Passover, it’s a seed, not a grain.

Israeli Salad – So refreshing, so delicious.

Sweet Potato and Apple Kugel – A surprising hit of the night!

Of course it wasn’t all vegan, as there was leftover meat from the night before, but everything I made was :

I think this was one of my brother’s plates… mine looked similar, it just didn`t have the meat ;)

I was SO thrilled that everyone loved EVERYTHING! I was nervous because it was the first time I’d made a lot of those dishes. For some I followed a recipe but tweaked it to my liking and for others I just kind of threw it all together. But, all in all it was a hit!

Okay…fine :) I can’t give you the haroset recipe because that was completely from a cookbook, but here are all the others….

And, if you can believe it, I’m cooking again tonight. We have a lot of leftover eggplant and tomatoes so I’m thinking homemade roasted tomato sauce to go with an eggplant parmesan. Yum!
