Cramming It In!

Today has been a day of cramming!

I have school Friday mornings, Friday evenings and Saturday mornings. And every Saturday I have a test or an exam.
One of my biggest weaknesses is procrastination. I think it’s because I work better under pressure, but it’s still a habit I am constantly trying to break. Since I don’t really have a lot of time to study on Fridays I somehow find myself up late on Friday nights and awake insanely early every Saturday morning cramming for my Chemistry tests! :oops:

At least I had some delicious oats to keep me company while I learned this morning!

Steel cut oats tops with goat milk yogurt, whipped honey and almond butter

I had two appointments today (one for a manicure!), but I managed to cram in a delicious lunch after my class.

Mediterranean Pasta Salad!

I chopped up green peppers, roasted red peppers, artichoke hearts, and kalamata olives

Cooked 2 cups of brown rice pasta swirls

And mixed everything together with EVOO, lemon juice, apple cider vinegar, a pinch of salt, a few shakes of pepper and some Herbes de Provence. And topped it with goats milk feta. Yum!

[You could also use cucumbers, celery, red onions, garlic, or tomatoes, but I just used what I had on hand!]

Definitely a recipe worth trying! It was very flavorful and fresh tasting.

And afterwards I even managed to cram in my manicure!

    When I was in grad school I was a huge baking procrastinator! I would bake cupcakes and bring them in for my class, or offer to make cookies for my brother, just as an excuse to not do work.

    I’m going to med school in the fall, and if my past habits are any sort of indication for the future, i will have some very very well fed classmates :)
