Soup in the Summer

I have a cold…in the summer. It’s seriously the worst to have a cold in the summer. And yet, I think I get one every year. There comes a point in the summer for me when I start eschewing regular exercise in favor of relaxing and am not quite as strict with my healthy food intake. Not to mention my consumption of fun summery cocktails and white wine goes way up and my hours of sleep go down. And then appears the cold, as if to say, “NOPE you can’t get away with anything!”

The day before the cold showed up(Saturday) BF and I had a lovely  breakfast outside at one of our favorite spots, Cafe Gitane.

We had an extra special treat in store for dinner though. Ed’s Lobster Bar!

BF had been wanting to try it, and I saw they had scallops on the menu…so I was sold!

They were delicious!

Even though I’ve been feeling under the weather the past couple days, I’ve still tried to make myself some good food. My throat has been scratchy so I have been trying to come up with things to eat to not irritate it. Lots of soup, and also smashed potatoes have been on the menu.

Though its hot out, soup has been necessary. My favorite is a simple and delicious carrot and ginger soup.

Carrot & Ginger Soup

Olive oil
1 medium chopped onion
1 knob of ginger, minced (depends how gingery you like it, I get about 1/3 cup after mincing)
2 cloves garlic, minced
6-8 carrots, peeled and chopped
5-6 cups vegetable stock
3 celery stalks
S&P

Heat olive oil in a sauce pan. Add onion, celery, ginger and garlic and cook for a few minutes. Add in the vegetable stock and carrots. Bring to a boil, then simmer uncovered for 30 mins. Carefully puree the soup with a hand blender or regular blender. Sprinkle on salt and pepper to taste. Reheat if needed. Serve!

 

Not that you need soup in the summer… but in case a little cold appears, you have a yummy, cold friendly recipe to make for yourself!

Hopefully I get better soon, I only have so much time left in NYC to explore!

Alright, I’m off to make a fruit smoothie and then eat more soup. Depending on how I feel I may go for a walk or to a yoga class. But for now, more resting.

    Aww! Get better! Summer colds SUCK because it never is cool to be indoors while it’s sunny and hot outside. At least in the winter snuggling indoors is nice.
