What You’ll Need:
- 1 container sour cream (or Greek Yogurt)
- 2 cans refried beans
- 1 jar salsa
- 1/2 cup scallions, chopped
- 1 large tomato, chopped
- 2 avocados, diced (or about 2 cups guacamole)
- 1.5-2 cups shredded cheese
- 1 can sliced black olives
- 1 jalapeño pepper finely chopped
- 2 cups shredded lettuce (optional)
- tortilla chips
Directions:
In sauce pan, combine refried beans and salsa. Heat on medium and stir together. Let cool. Spread beans and salsa in a pan or baking dish. Spread sour cream/greek yogurt over beans. Layer the cheese, olives, jalapeño, (lettuce if using,) tomatoes, avocados (or guacamole) and scallions. Repeat layering until you reach the top of the baking dish, end with cheese olives and jalapeño on top. Bake covered at 350F for 20 minutes until heated through and the cheese is melted. Remove foil for the last 5 minutes to brown cheese a bit. Serve with tortilla chips!
