My Baked Pasta with Roasted Carrots on the Side
Simple Baked Pasta and Veggies
(serves 2)
- Preheat oven to 350F
- Cook 1 cup of pasta until just before al dente. (I use brown rice pasta)
- Steam 1 cup vegetables until almost soft. (I used peppers, zucchini and shitake mushrooms, but feel free to use any veggies you want!)
- Heat up 1.5 cups good tomato sauce and mix together with pasta and veggies.
- Transfer mixture into a small baking dish and top with shredded cheese
- Bake, covered, for 30 minutes. For the last minute or two you can uncover and set the oven to broil to get the cheese nice and bubbly and brown (but watch it CAREFULLY so it doesn’t burn!)

Thank you so much for posting these recipes! I recently became a vegetarian two weeks ago for moral reasons. I’m running out of ideas about what to eat. I’ve been eating a lot of salad, beans, and tofu a lot, but I’m getting tired of it. I look forward to trying out these new tasty ideas. Thanks again!
