Tangy Bean Salad

Beans are on of my favorite foods. And they are super healthy!

Why beans are awesome:

  • They are a great source of protein, fibre and iron.
  • They are fat free, gluten free and vegan.
  • You can do a lot with them – put them in soups, salads, burgers, pasta dishes, rice dishes, stir fries, chili…I could go on :)
  • The are cheap!

Here is my adapted recipe for a delicious three bean salad from Wellsphere.

For this recipe you will need approximately 2 cups (or 1 can) of three different types of beans:
I usually go for chick peas, kidney beans and white (cannellini or butter) beans in this recipe, but feel free to choose any type you like!

You can cook dried beans from scratch or just used canned.

What You’ll Need:

  • 1/4 cup fresh lemon juice
  • 1/3 cup extra virgin olive oil
  • 1-2 cloves garlic, minced
  • 1/2 tbsp red pepper flakes
  • 1 tsp agave (or 2 tsp stevia)
  • 1/2 cup chopped fresh cilantro or flat leaf parsley (dried herbs could also work)
  • 2 cups (or 1 can) of each type of bean you choose 

 

Directions:

Blend together lemon juice, olive oil, garlic, agave, red pepper flakes and cilantro or parsley until smooth. Add salt and pepper to taste, then toss with the beans. 
Cover and refrigerate for a few hours (or overnight).

This is a great salad to bring to picnics, lunches, dinner parties or just to have on hand in the fridge.
