Ingredients:
2 cups whole wheat flour
1 1/2 cups all-purpose four
1 pkg. active dry yeast
2/3 cup warm water
1/4 cup honey or agave nectar
1/4 cup vegetable oil
3/4 tsp. salt
1 egg, 1 egg yolk, 1 egg white (or equal amounts egg replacer)
2 tsp. sesame or poppy seed
Instructions:
1. Put yeast into warm water and let sit for a few minutes. In a large mixer bowl combine the flour and the yeast. Stir in the honey, oil, and salt; add in egg and egg yolk. Beat with electric mixer on low speed for 30 seconds (you can also use your hands to mix up the dough)
2. On a lightly floured surface knead mixture for about 3 minutes. Place in a greased bowl, cover; let dough rise in a warm place for 1 to 1 1/2 hours.
3. Punch dough down. Separate into 3 equal pieces. Roll each piece into a long rope shape. Braid Challah. Place on a greased baking sheet and press ends of dough tightly to seal.
4. Mix together the remaining egg white and brush over loaf. Sprinkle with sesame or poppy seeds.
5. Bake in a 350 degrees F oven for 25 to 30 minutes or until golden. Cool.
Makes 1 Challah loaf.
